On the Go Breakfast: My 5 Faves

Breakfast is my favorite meal. I could eat it 3 times a day. I love pretty much all things breakfast - scrambled eggs, omelettes, waffles, yogurt parfaits, avocado toast, granola, pancakes, smoothies...the list goes on and on.

However, most days I don't have time to make breakfast before I leave for work, so I like to have some grub on hand that I can grab and get out the door. It needs to be healthy, delicious, quick to prepare and easy to pack. 

 

Banana Berry Smoothie: (pictured above)

1 banana

1/2 c frozen berries (I used raspberries)

1 handful spinach

1/2 c unsweetened vanilla almond milk

1 scoop vanilla protein powder

1/2 tbs coconut oil

1 tsp chia seeds

pomegranate seeds for topping

Put all ingredients in a blender except pomegranate seeds. Blend, pour in to go container and top with pomegranate seeds.

Yogurt Parfait:

1 c Greek yogurt

1/2 c fruit (banana, strawberry and raspberry)

1 tsp chia seeds

handful of walnuts

Top Greek yogurt with fruit, nuts and chia seeds. Enjoy!

 

Eggs + Apples

1 sliced apple

1 tbs peanut butter

2 hardboiled eggs

 

Protein Oatmeal:

1/2 c oats

1/2 c water

1/3 c egg whites

sprinkle of stevia

1 tbs nut butter

1/2 banana

1/4 c berries

8-10 walnuts

Heat oats and water in microwave for 45 seconds. Remove from microwave, add egg whites and heat again for 30 seconds. Add stevia and nut butter and mix. Put in to go container and top with fruit and nuts. 

Berry Chia Seed Pudding:

1 1/2 c unsweetened vanilla almond milk

1/2 scoop vanilla protein powder

1/4 c chia seeds

1/2 sp cinnamon

1/2 tsp vanilla

1 cup berries

Combine all ingredients in a bowl, mix, cover and leave over night. Makes 3 servings.
